Strawberry Crunch Micro Salad
Preparation Time: 10 minutes
What you need:
6 ounces green cabbage (about 2 1/2 cups shredded)
2 ounces carrots (about 1 carrot)
1 ounce raisins (about 1/4 cup)
1/2 tart apple
1 ounce almonds or walnuts (about 1/4 cup)
1 teaspoon chia seeds
1 small lime, juiced
4 ounces fresh or frozen strawberries (about 1 1/4 cups)
What you do: Put all ingredients into a food processor and chop coarsely with the s blade.
I served mine over a bed of spinach, but it’s just as delicious by itself!
Top with more berries of your choice if you’d like.
