Vegan Cornbread Muffins

Makes: 6 muffins

What you need:

1/2 cup cornmeal

1/2 cup whole-wheat pastry flour

1/2 tsp baking soda

1/4 tsp salt

1/2 cup applesauce

1/2 cup unsweetened non-dairy milk

6 dates

1 Tbsp canola oil

What you do:

Preheat oven to 325 degrees.  Prepare muffin tins.

Place the dates in a glass bowl with enough water to cover.  Microwave for 30 second to soften the dates.

Combine the cornmeal, flour, baking soda, and salt in a large bowl.  In a high-speed blender, blend the applesauce, non-dairy milk and dates (without the water) until smooth.  Mix the wet and dry ingredients and add the oil.  Pour mixture into prepared muffin tins.  Let stand for five minutes before baking.  This helps to get a good crown on the muffins.  Bake 15 to 20 minutes, until nicely browned on top.
