Black Bean Burgers:
1/2 Yellow Onion
1 jalapeño, seeded & chopped
3 garlic cloves
1 (14.5 oz) can black beans, drained & rinsed
1/2 C plus 2 TB rolled oats
1 ear yellow corn kernels or 1 cup thawed frozen kernels
1 green onion, thinly sliced
2 tsp cumin
1/4 tsp cayenne or chipotle chili powder
salt & pepper to taste
Place yellow onion, jalapeño & garlic in food processor & pulse 5-6 times. Add 3/4 of the black beans, oats, corn, green onion, cumin, & cayenne. Season with salt & pepper & pulse 8 times. Scrape down sides of the bowl & pulse an additional 5-8 times. (Sometimes this takes me a little longer to get the right consistency). Place mixture in a bowl & stir in rest of black beans. Cover & refrigerate for at least 2 hours. Remove chilled mixture & stir in a few breadcrumbs if needed. Heat up skillet on medium-low heat, & add a little olive oil. Cook patties 5-7 minutes on each side.
Assemble with your favorite toppings.
