Vanilla Sabayon & Fresh Fruit
1 3/4 c. cashews, soaked overnight in filtered water and drained
7 Medjool dates or 14 Deglet Noor dates, pitted
1/4 to 1/2 c. coconut water, as needed
1 vanilla bean, pulp scraped out
1/2 tsp vanilla extract
Your choice of fruit
What to do: In a high-speed blender combine all ingredients except for the fruit and blend until very smooth, adding more coconut water as needed to achieve a thick but pourable mixture.
Spoon over your choice of fruit.
