Raw Apple Crumble

Raw Apple Crumble

serves 4

1/2 cup walnuts

2 pitted dates

Diced Apples:

3 apples, peeled & diced

1 Tbsp lemon juice

Apple Sauce:

2 apples, peeled and diced

2 Tbsp lemon juice

5 pitted dates

1/4 cup raisins

1/4 tsp cinnamon

1/4 tsp nutmeg

Topping: Blend the walnuts and dates in a food processor until finely ground.  Set aside in a small bowl

Filling: Toss the 3 diced apples with the 2 Tbsp lemon juice and set aside. Make the apple sauce by placing all of the “sauce” ingredients into the food processor and blend well.  Toss this mixture with the diced apples.

To Serve: Place one-fourth of the apple filling into four small dessert dishes and sprinkle with date-nut topping.

A good eating apple works best: Fuji, Gala or Pink Lady.

  2. This recipe, which is from the McDougall Newsletter October 2011 issue with guest chef Cathy Fisher, is really very good, even to people who are used to traditional desserts. My family loves it!

    • Hi, Michelle ~
I didn’t know that. I was given the recipe by a friend. Amazing how recipes make the rounds these days. I think this will become a regular in my repertoire. Glad to see you here. 🙂

  3. Yeah, it bugs me when recipes lose their attribution. I think the creators deserve credit for all these great vegan super healthy creations. But the healthy food community seems to be very forgiving and generous on this point. I’m always happy when my recipes go off to live a life of their own out in the world!
