Sweet Potato Oatmeal

What you Need:

2 small-ish or 1 large sweet potato or yam (I used a yam)

1/2 cup regular oats

1 1/4 cups unsweetened almond milk

10 dates

1 tsp vanilla

2 Tbsp pecans or walnuts

1 tsp cinnamon

2 Tbsp raisins

2 Tbsp ground flax seed

Topping:

1/2 cup almonds or walnuts

3 dates

What you do:

Make the crumbly topping by processing nuts and dates until finely chopped.  Set aside

Heat oven to 350°

Bake the sweet potato and scoop out of the shell into a medium sized bowl and mash.

Mix in the oats

Combine the milk, dates and vanilla in a high speed blender and blend well.  Add to the oat / sweet potato mixture

Add the rest of the ingredients and stir well.  Transfer mixture to a small casserole dish.  Top with the crumbly topping. Bake for 20 minutes.

Serve hot or cold.
