Raw Apple Oat Breakfast

1/4 cup oats — old fashioned or quick cooking (not instant)

1/4 cup non-dairy milk or apple juice

1 Tbsp ground flaxseed

1 apple, cored, seeded & chopped or grated

1 Tbsp pecans

1 Tbsp currants

1/4 tsp cinnamon

Mix oats, milk and flaxseed in a bowl.  Add remaining ingredients and stir to coat the apples.

The bowl can now be covered and placed in the refrigerator overnight or you can enjoy your cereal right away.

Add more milk, if needed, if you let the ingredients soak overnight.
