Quick Steel Cut Oats
adapted from a recipe by Jill Nussinow

Ingredients:
2 cups water
1 cup unsweetened non-dairy milk
1 cup steel cut oats
1/2 tsp vanilla extract
1/4 cup raisins or other dried fruit
1 tsp cinnamon

Topping Ideas:
chopped apples
cinnamon
date crumbles
walnuts or other nuts
ground flaxseed
raisins or other dried fruit

Directions:
Using an Instant Pot, place all ingredients in the pressure cooker.  Lock on the lid.  Using the “Manual” function, cook for 3 minutes.  When the time is up, let the pressure come down naturally and open the pot.  Check to see that the oats are cooked.  If not, turn off the pot, lock the lid back on and let sit  for five to ten minutes.  Divide among bowls and top with your favorite toppings.  Leftovers refrigerate well for about four days.  Also freezable!
