Pumpkin Spice Latte

What you need:

1 cup non-dairy milk

1/3 cup pumpkin puree

1/2 tsp vanilla

2/3 tsp pumpkin pie spice

1/4 tsp cinnamon

6 dates

Brewed coffee or coffee alternative (like Teeccino)

Extra warmed non-dairy milk

What you do:

Place the dates and enough water to cover in a glass bowl and microwave for 30 seconds to get them nice and soft.  Drain the liquid.

Place all ingredients — including the dates but not the coffee — in a high-speed blender and blend well.  Taste & adjust spices to your liking.  Once blended, continue to blend to heat up the mixture.  You can also warm it up in a pan or in the microwave at this point.

Warm or froth the extra non-dairy milk

In a 16 oz. cup, place 8 oz coffee or coffee alternative and 1/2 cup of the pumpkin mixture.  Add the warm milk, stir, top with the milk foam, sprinkle with a little pumpkin pie spice and enjoy!
