Healthy Banana Pancakes with Peach Sauce

Healthy Banana Pancakes

What You Need:

1 cup gluten-free all-purpose baking mix (I use Bob’s Red Mill)

1/2 cup rice flour

1/2 cup whole wheat pastry flour (can use oat flour to make gluten free)

3/4 tsp baking soda

3/4 tsp baking powder

1 cup non-dairy milk

juice of one lemon

1 tsp vanilla

2 Tbsp date syrup

1 flax egg (see note)

One banana cut into small chunks

What you do:

Combine all dry ingredients in a bowl and mix well.

Combine all wet ingredients.

Mix wet and dry ingredients.

Add banana

Heat lightly oiled griddle over medium heat.  When hot, spoon batter onto griddle.  Cook a few minutes and flip when bubbles on top begin to break. Cook until done.

Serve with peach sauce (below).

Note: To make a flax egg, mix 1 Tbsp ground flaxseed and 3 Tbsp water together and set aside until jelled.  You can also use chia seeds

Peach Sauce

What You Need:

2 cups frozen peaches, thawed

1 tsp vanilla

8 dates

1/2 tsp cinnamon

What You Do:

Put all ingredients in a highspeed blender and blend until smooth.  Heat if desired. Spoon over banana pancakes.
